I have looked and don't think that this is a feature in this release.

I always get the schedule for a Softball League about 2 weeks before it is ready to be published and would love to go ahead and add it to the site before hand but not have it viewable by the public until the Directors of the league tell me to go live with it. Is there a simple way of doing this or is it something that might be able to be added to a future release?

Correct, that is not currently possible. If you know some PHP and MySQL you could add a checkbox to toggle show/hide for each game (or even a "Play (hide)" option in the normal list). I'm not completely sure whether this should be a core feature, but I'll add it to the wish list!
