How do I change the Username that is on the screen at the beginning prior to anyone logging in?

Do you mean the text label? You could edit wp-login.php itself, but there might be other ways to do it. The best place to ask is on the wordpress.org forums: http://wordpress.org/support/

Actually, my login username shows up. Can I change that to a blank login until someone enters their username?

That's likely a browser or cookie issue, not a WordPress issue :)
